First of all, if you haven't bought a canister yet, it is best to buy a smaller one. This is because on the off chance that your coffee does go bad, you will only be losing a small batch. Plus, smaller batches finish quickly so you can purchase fresh coffee frequently rather than stretching out the limit of how long the canister can keep it fresh (which ranges from 1-5 months).
If you already own a large sized canister, then try to put less coffee in it or store whole beans. Whole beans stay fresh a lot longer so it's safer to store more of them. Try roasting them so that their life increases even more.
However, it is best to not leave any extra space or air in the canister as that means more moisture and oxygen when it opens. Thus, try to opt for a smaller size.
If you don't have a canister at home, there are still a number of measures that you can take to ensure that your coffee does not go bad.
First and foremost, keep it away from light. This goes for both artificial and sunlight. Light is a very dangerous factor that will disrupt everything in your coffee. First, it will decolourise it. Secondly, it will strip it of its nutrients - including vitamins, fats and proteins.
Not only does this spoil the flavour of the coffee but it makes it less healthy too, thus eliminating the true benefits that it has to offer.
If you are not storing your coffee in a canister, it is best to keep whole beans rather than grind beans. This is because grind beans are exposed to a larger surface area, thus they are more susceptible to turning stale and losing their taste.
Coffee experts like Scott Martin who have tested quality coffee and are part of various important groups say that coffee canisters need to be stored on pantry shelves.
The reason behind this is that they remain safe from excessive light, heat, moisture and any other factors that could potentially reduce the freshness of the coffee inside them.
Some experts also believe that placing your coffee container in a chiller or freezer is also a good way to store coffee. However, this is more of a temporary solution as coffee will remain fresh in a freezer only upto a week. Plus, this is best used as an alternate solution in case you don’t own a canister.
If you don't have a pantry at home, simply place your coffee canister in a cupboard in the kitchen or anywhere where there is low lighting and less moisture. Make sure it is easily accessible as well.
